If you’re tired of making the Lockdown banana bread, don’t fret, we have something delicious to share! This recipe from Nourishing Amy uses simple ingredients to create (slightly addictive) Açaí, Peanut Butter Chocolate Cups.

The Açaí Chia Jam, is really versatile and keeps in the fridge for 4-5 days, you can double the recipe also add a couple of spoons to toast, crumpets or porridge. Chia seeds are high in protein and fibre, the Açaí is antioxidant rich which helps tackle free radicals to keep your defences high, similar to blueberries but better! The healthy omegas 3,6,9 are great for heart and brain health.

Acai PB&J Chocolate Cups

Makes: 8

Time: 15 minutes plus chilling time


Açaí Chia Jam (makes 120g):

1 x pouch Sambazon Unsweetened Açaí

1 ½ tbsp chia seeds

1 tbsp maple syrup

½ tsp vanilla essence

½ tsp cinnamon

Chocolate Cups:

300g chocolate, broken up

2 tbsp coconut oil

60g crunchy peanut butter

To serve: extra chia seeds, cacao nibs, pomegranate


1. Make the Açaí Chia Jam: allow the Açaí to defrost then add to a saucepan and warm gently. Add in the chia seeds, maple syrup, vanilla and cinnamon and stir. Keep stirring over a gentle heat for 2 minutes then remove from the heat and allow to cool fully – it will thicken as it cools – stir every so often.

2. Make the chocolate cups: add the chocolate and coconut oil to a heat-proof bowl and set over a pan of simmering water. Allow the chocolate and coconut oil to melt fully.

3. Add 1 tbsp of the melted chocolate mixture to the base of 8 muffin cases or silicone muffin moulds, spreading up the sides slightly. Set in the freezer for 10 minutes.

4. Add 1 small tsp of peanut butter to each chocolate base and then 1 small tsp of Açaí Chia Jam on top (about 50-60g jam in total). Cover the cups with the rest of the melted chocolate. Sprinkle over some chia seeds and cacao nibs, if desired and set in the fridge for 20-30 minutes. Serve with pomegranate seeds, if desired.
